Vivek Kashiwale

HEAD CHEF

With over 15 years of culinary experience working as a Head Chef and Executive Chef in a number of prestigious establishments across the UK and India, award-winning Chef Kashiwale has a passion for serving up delectable modern Indian cuisine.

Born in Gwalior, India, it was here that his journey into the culinary world first started – working as a Kitchen Management trainee for Hotel K.C. Residency. During his five-year tenure at the property, he worked his way up to Junior Sous Chef, indulging his passion for great tasting, excellently presented food.

Chef Vivek’s career to date has seen him work across a number of celebrity hot spots, including the popular The Bird by Vineet, UK, where he held the position of Club Executive Chef. Here Vivek managed all the culinary requirements for six bars and three event suites, as well as managing a full food & beverage team of twelve chefs. Known for his culinary creativity and presentation skills, Chef Vivek received the award for ‘Best Starter’ at the Leeds Curry Awards in 2008, as well as the Oliver Award for “Best Indian Restaurant in Yorkshire” in 2012.

Prior to joining Mint Leaf of London Dubai, Vivek headed up the team at Mint Leaf of London, before moving to Dubai.

Born in India, Vivek has a diploma in Hotel Management from The Institute of Hotel Management India, and when he is not in the kitchen can be found relaxing on the beach in the sun.

William Fernandes

RESTAURANT MANAGER

Having worked in the food and beverage industry throughout the Middle East since 2004, William Fernandes is driven and results-oriented, with a wealth of experience from various sectors providing him with an in-depth knowledge of the region’s hospitality landscape.

Having developed his leadership and team management skills with international brands including Tablez, along with homegrown venues in Bahrain and the UAE, William has a strong knowledge of key managerial operations, from performance management and budget control through to supplier negotiation.

Moving into his role as Restaurant Manager at Mint Leaf of London, Dubai, William is responsible for overseeing restaurant operations across the restaurant, bar and lounge areas in the venue, ranging from improving productivity, business development and administration of the Mint Leaf Group’s internal policies and procedures. William’s impressive industry knowledge and experience are set to see him achieve great success at Mint Leaf Dubai, as he will contribute to staff development and training, streamlining operations across Front of House, and compliance with the Mint Leaf Group’s strict hygiene and sustainability standards.

You take a lift from an office block to enter Mint Leaf and it really does feel like you are somewhere special! Superb skyline views of the city can be observed (especially as the sun comes down) perfect with cocktails and great atmosphere in the day and evening. ” I have been to several Indian restaurants in Dubai and this one seems to be the best of the lot! I have always been under the impression that such high profile restaurants had a good ambiance and service but food is not value for money but Mint Leaf of London has changed this perception.They serve authentic Indian cuisine with great presentation and taste.Me and my wife had a great time and would recommend to all. “
